Ingredients
1/4 tsp Essence of Emeril .
1/2 c all-purpose flour, plus .
1/4 tsp Essence of Emeril, plus .
12 large fresh jalapeno peppers .
1 1/2 c panko .
1/2 c milk .
vegetable oil, for frying .
3 tbsps all-purpose flour, divided .
6 slices bacon, cooked & crumbled .
1 large egg, lightly beaten .
1/2 c monterey jack cheese, grated .
4 oz cream cheese, softened
Directions
Step #1 In a deep-fryer or heavy-bottomed stock pot add enough oil to come 1/3 of the way up the sides of the pan.
Step #2 Heat oil to 370 degrees F over med-heat/flame.
Step #3 Cut a slit lengthwise in each pepper down 1 side to create a pocket.
Step #4 Leave stem intact & remove seeds if desired.
Step #5 Combine cream cheese, Monterey Jack, crumbled bacon, & Essence.
Step #6 Place mixture in a zip-top plastic bag or large piping bag.
Step #7 (If using a zip-top plastic bag, cut & remove 1 corner of the bag, large enough so that the bacon will squeeze through.
Step #8 ) Squeeze mixture to the bottom of the bag & fill each pepper with as much of the cream cheese mixture as will fit.
Step #9 Press slit edges of the pepper together to seal.
Step #10 In a small bowl, mix 1/2 c flour, milk & egg.
Step #11 Place remaining 3 tbsps flour, & 1/2 tsp of Essence in a shallow bowl or plate, panko crumbs, & stir this to mix.
Step #12 Working in batches, dip stuffed jalapenos into the milk batter & then roll in the panko mixture, pressing to coat.
Step #13 Working in batches, if necessary, carefully place jalapenos in preheated oil & fry until golden brown, 1 to 2 mins.
Step #14 Remove from the oil & drain on a paper-towel lined plate.
Step #15 Cool slightly before serving, as the cheese is extremely hot.
