West African Peanut Soup Recipe

Ingredients
  • 1 tbsp sugar (optional) .
  • 1 c sliced carrots .
  • 1 c smooth peanut butter .
  • 4 c vegetable stock or water .
  • 2 c sliced onions .
  • 1 tsp grated peeled fresh gingerroot .
  • 1 tbsp peanut oil or vegetable oil .
  • 1/2 tsp cayenne .
  • 2 c sliced sweet potatoes (up to 1 c white potatoes can be substituted) .
  • 1 c sliced scallions or chives .
  • 2 c tomato juice

Directions
  • Step #1 Saute the onions in oil until just translucent.
  • Step #2 Stir in the cayenne & ginger.
  • Step #3 Add the carrots & saute a couple more mins.
  • Step #4 Mix in the potatoes & stock.
  • Step #5 Bring the soup to a boil & then simmer for about 15 mins until the vegetables are tender.
  • Step #6 In a mixer or food processor/blender, puree the vegetables with the cooking liquid & the tomato juice.
  • Step #7 Return the puree to the soup pot.
  • Step #8 Stir in the peanut butter until smooth.
  • Step #9 Taste the soup.
  • Step #10 Its sweetness will depend on the sweetness of the carrots & sweet potatoes.
  • Step #11 If it is not naturally sweet, add just a little sugar to enhance the other flavors.
  • Step #12 Reheat the soup carefully, using a heat diffuser if needed to prevent scorching.
  • Step #13 Add more water, stock, or tomato juice for a thinner soup.
  • Step #14 Serve topped with plenty of sliced scallions or chives.
