Corn Latkes Recipe

Ingredients
  • 3 c frozen corn kernels (I've tried fresh as well & frozen works better) .
  • 1/4 c all-purpose flour .
  • salt .
  • 1 tsp sugar or Splenda sugar substitute .
  • 3 large egg whites .
  • 4 tsps canola oil

Directions
  • Step #1 Place two non-stick baking sheets in the oven & preheat to 450°F.
  • Step #2 Cook the corn in a medium saucepan with a c of boiling water ‘until tender, about 2 mintes.
  • Step #3 Drain the corn in a colander & let cool.
  • Step #4 Press the corn lightly to squeeze out excess water.
  • Step #5 No wringing.
  • Step #6 Puree 1 c of the corn kernels in a food processor/blender.
  • Step #7 Add salt to taste, sugar & egg whites & process until just mixed.
  • Step #8 Transfer the mixture to a bowl & stir in the the flour, then the remaining corn kernels.
  • Step #9 Brush 2 tsps of oil on the now hot baking sheets.
  • Step #10 Spoon small mounds of the latke mixture on the sheets forming 2 to 2 ½ inch pancakes.
  • Step #11 The sheet should sizzle a bit when the batter hits it.
  • Step #12 Leave one inch between each latke.
  • Step #13 Bake the latkes in the oven until golden brown, 6 to 8 mins per side,turning once with a spatula.
  • Step #14 (When you turn the latkes, try to flip them onto spots on the baking sheet that still have oil.
  • Step #15 ).
  • Step #16 Serving suggestions: If you are in a sweet mood serve latkes with sour cream & strawberiy or raspberry preserves.
  • Step #17 Savroy more your style, then try sour cream alone or with some sliced scallions.
