Wild Rice Stuffed Mushrooms Recipe

Ingredients
  • 2 tbsps butter or margarine .
  • 1/4 c freshly grated parmesan cheese .
  • 12 large white mushrooms .
  • 1/2 c cooked wild rice .
  • 2 garlic cloves, inced .
  • salt, to taste .
  • 1/2 c whipping cream .
  • fresh ground pepper, to taste .
  • fresh rosemary leaves

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Butter a shallow baking dish.
  • Step #3 Snap stems off mushrooms & chop.
  • Step #4 Please caps with tops down in buttered dish.
  • Step #5 Melt butter in a medium size skillet.
  • Step #6 Add garlic & mushroom stems.
  • Step #7 Cook over med-heat/flame, stirring, 3 mins.
  • Step #8 Add wild rice, salt & pepper & boil 1 min, cream, stirring until mixture is thickened.
  • Step #9 Spoon wild rice mixture into the mushroom caps.
  • Step #10 Sprinkle top with the Parmesan cheese & top each with two or three leaves of rosemary.
  • Step #11 Bake 10-15 minues or until hot.
  • Step #12 Serve warm.
