Prawn Sang Choy Bow Recipe

Ingredients
  • 1 tsp sliced red chili .
  • 1 tbsp olive oil .
  • salt & pepper .
  • 6 leaves iceberg lettuce, shaped into c .
  • 1/2 tsp coriander root, sliced .
  • 115 g water chestnuts, sliced .
  • 750 g prawns, sliced .
  • 2 tbsps sliced spring onions (green onions) .
  • 1 tsp sesame oil .
  • 2 cm ginger, peeled & grated .
  • 1/2 lime, juice of .
  • 2 tbsps coriander leaves, sliced .
  • 2 garlic cloves, peeled & sliced

Directions
  • Step #1 Heat sesame & olive oil in wok over med-heat/flame.
  • Step #2 Add spring oinions, garlic & ginger & cook 1 min.
  • Step #3 Turn heat to high & add prawn meat, chilli, coriander root, water chestnuts, coriander leaves & black pepper & stir-fry 3 mins.
  • Step #4 Remove from heat, season to taste & add lime juice.
  • Step #5 To serve: with a slotted spoon scoop mixture into lettuce-leaf c & serve.
