Nova Scotia Hodge Podge Recipe

Ingredients
  • 1 lb fresh green peas .
  • salt .
  • 1 c finely sliced salt pork .
  • 1/4 c flour .
  • 6 medium potatoes .
  • 1 c light cream .
  • 1/4 tsp pepper .
  • 8 carrots .
  • 1/2 lb fresh green beans (or waxed) .
  • 1 small cauliflower (optional) .
  • 3 tbsps green onions

Directions
  • Step #1 Split the beans in half lengthwise.
  • Step #2 Cut carrots into long sticks.
  • Step #3 Shell peas & place all together into unsalted, boiling water.
  • Step #4 Boil fast uncovered for 8 mins.
  • Step #5 Drain, reserving 1 c of cooking water.
  • Step #6 Peel potatoes & slice into matchsticks.
  • Step #7 Cook covered til just tender.
  • Step #8 Drain, reserving water.
  • Step #9 Set aside.
  • Step #10 Break cauliflower into flowerlets.
  • Step #11 Place in a saucepan, & using potato water, boil uncovered 8-10 mins Drain & set aside.
  • Step #12 Mix vegetables in a warm dish.
  • Step #13 Cover up & let this stand in a warm place.
  • Step #14 While vegetables are cooking, prepare sauce:.
  • Step #15 Melt sliced salt pork in a cast iron frying pan over med-heat/flame.
  • Step #16 When golden brown, discard enough fat so only half a c remains.
  • Step #17 Add flour & stir over med-heat/flame until it turns a light brown colour.
  • Step #18 Pour in cream, vegetable water & stir until creamy.
  • Step #19 Add chives or green onions, pepper, & salt to taste (as salt pork is often sufficient).
  • Step #20 Pour over the vegetables, & serve.
