Honey Pineapple Carrot Salad Recipe

Ingredients
  • 1 c grated carrots .
  • 1/2 pint whipping cream, defrosted or 1 1/2 c whipped topping, defrosted .
  • 2 tbsps orange juice concentrate, undiluted .
  • 1/4 c honey .
  • 1 (20 oz) can crushed pineapple .
  • 2 tbsps lemon juice .
  • 2 (3 oz) boxes lemon gelatin

Directions
  • Step #1 Drain liquid from canned pineapple into a measuring c & ADD enough water to make 1 1/2 c liquid.
  • Step #2 Pour liquid into a pan & bring to a boil; Stir in gelatin until dissolved.
  • Step #3 Remove from heat & mix in honey, lemon juice & orange juice concentrate.
  • Step #4 Pour into a medium bowl & put in the fridge until SLIGHTLY thickened, 20 to 25 mins.
  • Step #5 Whip cream until soft peaks from or use whipped topping; mix gelatin, pineapple, carrots & whipped cream or topping.
  • Step #6 Pour into a 9x9-inch pan & put in the fridge until firm, cut into squares to serve.
