Fruity Creme Brulee Recipe

Ingredients
  • 3 whole eggs .
  • 2 egg yolks .
  • 1 tsp vanilla .
  • 1/4 c sugar .
  • 3 c half-and-half .
  • confectioners' sugar, to dust .
  • 1 pint blueberries, lightly rinsed & drained (or raspberries)

Directions
  • Step #1 Line the bottom of eight 1/2 c ramekins(or custard c) with the berries, & set them aside.
  • Step #2 Preheat oven to 300*F.
  • Step #3 Heat the half & half in a heavy saucepan over medium high heat, just to the boiling point.
  • Step #4 Whisk the sugar, whole eggs, & egg yoks together In a large-ish bowl until the mixture is light & frothy.
  • Step #5 Now slowly whisk the hot half & half into the egg mixture; mix thoroughly, & strain the mixture back into the saucepan.
  • Step #6 Using a wooden spoon, stir the mix over low heat/flame just until it coats the back of the spoon.
  • Step #7 Add vanilla.
  • Step #8 Divide the custard among the berry lined ramekins, & set them in a baking dish.
  • Step #9 Pour the hot water into the dish until it reaches 2/3 of the way up the sides of the ramekins.
  • Step #10 Place the dish in the oven & bake this until a toothpick inserted in the center of one of the custards comes out clean, about 35 to 40 mins.
  • Step #11 Remove the ramekins from the water bath & allow them to cool slightly.
  • Step #12 Then cover & put in the fridge util they are chiled, about 2 hrs.
  • Step #13 To serve, preheat the broiler.
  • Step #14 Sift a light layer of confectioners' sugar over the ramekins, & place them under the broiler just until the sugar caramelizes, 2-4 mins.
  • Step #15 Serve as soon as possible.
