Rajma Tikki {savoury Cutlets Made From Red Kidney Beans} Recipe

Ingredients
  • 10 g sliced fresh coriander leaves .
  • To serve this with .
  • 10 g red chili powder .
  • 100 ml mint chutney .
  • 10 g cornflour .
  • 20 g chat masala .
  • 1 tbsp ginger-garlic paste .
  • 10 g sliced onions .
  • 10 g cumin powder, roasted .
  • oil, to deep fry .
  • 150 g red kidney beans, soaked overnight in lots of water .
  • salt .
  • 5 g green chilies, sliced .
  • For garnishing .
  • 10 g chat masala .
  • 10 g red capsicums, juliennes .
  • 10 g carrots, juliennes .
  • 100 ml tamarind chutney or tomato ketchup .
  • 10 g cumin powder .
  • 10 g beetroots, juliennes

Directions
  • Step #1 Add salt & cook the kidney beans in the same water in which they were soaked overnight.
  • Step #2 More water may be added if needed.
  • Step #3 Cook until tender.
  • Step #4 Drain well, cool & pat on clean kitchen paper towels.
  • Step #5 Mince or mash the kidney beans.
  • Step #6 Add the remaining ingredients, except oil & knead to make a dough.
  • Step #7 Divide the dough into 8 portions.
  • Step #8 Heat oil in a wok.
  • Step #9 Deep fry one cutlet first in the oil until golden.
  • Step #10 If it opens up, add a little more cornflour & knead the mixture well.
  • Step #11 Then, shape into cutlets & deep fry in the oil.
  • Step #12 Drain on a clean kitchen paper towel.
  • Step #13 Sprinkle top cumin powder & chat masala powder on the cutlets.
  • Step #14 Garnish with carrot, beetroot & capsicum juliennes & onion slices.
  • Step #15 Serve hot with the ketchup or chutneys.
