Sticky Orange Coconut Pinwheels Recipe

Ingredients
  • 1/4 c sweetened flaked coconut .
  • 1/2 c sugar .
  • 1 orange, zest of .
  • 1 tbsp unsalted butter (melted plus more for baking dish)

Directions
  • Step #1 Prepare one-quarter of the recipe for Granny Foster’s Refrigerator Rolls dough, through step 5.
  • Step #2 Preheat oven to 350°.
  • Step #3 Lightly butter a 9-inch round glass baking dish; set aside.
  • Step #4 In a small bowl, coconut, mix sugar, & orange zest; set aside.
  • Step #5 Using a rolling pin, roll dough into a 12-inch round, about 1/4 inch thick.
  • Step #6 Brush with melted butter; set aside.
  • Step #7 Sprinkle top sugar mixture evenly over dough.
  • Step #8 Cut into twelve equally sized pie-shaped wedges.
  • Step #9 Beginning at the wide end of the wedge, roll it up.
  • Step #10 Arrange wedges in a pinwheel pattern in prepared baking dish.
  • Step #11 Cover up with a clean kitchen towel, & let rise until doubled in size, about 30 mins.
  • Step #12 Bake until golden brown, 25 to 30 mins.
  • Step #13 Drizzle glaze over pinwheels.

  • Step #15 1/4 c sugar 1/4 c sour cream 2 tbsps freshly squeezed orange juice 2 tbsps unsalted butter In a medium saucepan, mix all ingredients.
  • Step #16 Cook, stirring constantly, over med-heat/flame until sugar dissolves.
  • Step #17 Increase heat to high, & bring mixture to a boil.
  • Step #18 Cook, stirring constantly, for 3 mins more.
