Corn Relish Salad Recipe

Ingredients
  • 5 fresh basil leaves, finely sliced
  • 3 medium tomatoes, seeded & sliced
  • 1/2 tsp dried oregano
  • 1/4 c reduced-fat Italian salad dressing
  • 1 (2.25 oz) can sliced ripe olives, drained
  • 1/2 c sliced red onion
  • 2 c fresh or frozen corn
  • 1/2 c sliced celery
  • 1/2 tsp garlic powder
  • 1/4 tsp lemon-pepper seasoning
  • 1 (6.5 oz) jar marinated artichoke hearts, undrained
  • 1 medium green pepper, sliced

Directions
  • Step #1 In a large bowl, mix the first six ingredients.
  • Step #2 In another bowl, salad dressing, garlic powder, basil, mix the artichoke, oregano & lemon-pepper.
  • Step #3 add to corn mixture & toss carefully.
  • Step #4 Cover & put in the fridge for at a least 6 hrs before serving.
