Brown Rice (baked) Recipe

Ingredients
  • 1/4 tsp dried basil .
  • 2 tsps dried onion flakes .
  • 1/4 tsp dried oregano .
  • fresh cilantro (optional) or fresh parsley (optional) .
  • 1 tsp poultry seasoning .
  • 1/2 tsp dried parsley .
  • 2 1/2 c water .
  • 2 chicken bouillon cubes .
  • 1/4 tsp dried thyme .
  • 1/2 tsp black pepper .
  • 1 c brown rice, uncooked .
  • 2 bay leaves .
  • 1/4 tsp red pepper flakes (optional) .
  • 2 tbsps canola oil (or butter)

Directions
  • Step #1 Preheat oven to 375°F.
  • Step #2 Heat heavy skillet (I use cast iron) until hot.
  • Step #3 Add oil & then add uncooked brown rice.
  • Step #4 Stir rice in oil until golden brown, stirring constantly.
  • Step #5 (some grains will be golden while other grains will look darker).
  • Step #6 In the meantime heat water & add bay leaves, black pepper, poultry seasoning, bouillon cubes, oregano, parsley, minced onion flakes, basil & pepper flakes.
  • Step #7 Bring to a boil.
  • Step #8 When rice is golden & ready, pour rice into a covered 2 quart casserole dish.
  • Step #9 Add the boiling liquid on top of the rice.
  • Step #10 CAREFUL! IT WILL SPUTTER.
  • Step #11 Cover up casserole with aluminum foil wrap AND the cover for the casserole dish (to make sure steam does not escape from the rice).
  • Step #12 Bake for 1 hr.
  • Step #13 Remove from oven & let sit covered (DON'T PEEK!) for 15 mins.
  • Step #14 Fluff with fork before serving.
