Green Cabbage And Apple Sauté Recipe

Ingredients
  • 3 lbs head green cabbage, halved cored & coarsely shredded (12 c) .
  • salt & freshly ground black pepper .
  • 1 1/2 tbsps sugar .
  • 1 large onion, thinly sliced .
  • 2 granny smith apples, peeled halved, cored & sliced 1/8 inch thick .
  • 2 tbsps fresh lemon juice .
  • 1 c riesling wine .
  • 1/4 c extra-virgin olive oil

Directions
  • Step #1 In a large bowl, toss the cabbage with the wine, lemon juice & sugar.
  • Step #2 Let marinate for 1 hr, tossing often.
  • Step #3 In a large deep skillet, heat the olive oil.
  • Step #4 Add the onion & cook over moderate heat until golden, about 8 mins.
  • Step #5 Add the cabbage & its marinade & cook over moderately high heat, until wilted, tossing, about 5 mins.
  • Step #6 Cover up & cook over moderately low heat, stirring every once in awhile, until almost tender, about 20 mins.
  • Step #7 Add the apples & toss well.
  • Step #8 Cover up & cook, stirring every once in awhile, until the apples are just tender, about 10 mins.
  • Step #9 Spice up with salt & pepper & serve.
