Chicken Soup Recipe

Ingredients
  • 3 sprigs fresh parsley
  • 1 (2 to 3 lb) whole chicken
  • 1 leek, quartered
  • 1 turnip, quartered
  • salt & pepper to taste
  • 2 carrots, quartered
  • 2 stalks celery, quartered
  • 1 tsp sliced fresh dill
  • 1 parsnip, sliced
  • 1 onion, quartered

Directions
  • Step #1 Place chicken, turnip, leek, onion, carrots, parsnip, celery, parsley & dill in an 8 quart stock pot; cover with water & bring to a boil.
  • Step #2 Reduce heat; cover, & let simmer for 2 hrs.
  • Step #3 Remove whole chicken from soup, tear meat from bone, & set meat aside.
  • Step #4 Discard chicken bones, parsley & dill.
  • Step #5 Remove vegetables from stock pot.
  • Step #6 Using a food processor/blender, puree vegetables & return to stock pot, along with chicken.
  • Step #7 Salt & pepper to taste.
