Twice Baked Squash Recipe

Ingredients
  • 6 tbsps brown sugar or sugar, in the raw .
  • 3 small butterc squash .
  • 1/4 tsp nutmeg .
  • 1/2 c sliced pecans (optional) .
  • 1/2 tsp salt .
  • 1/3 c nonfat sour cream

Directions
  • Step #1 Heat oven to 425F degrees.
  • Step #2 Cut squash in half lengthwise, scoop out seeds & fibers & discard.
  • Step #3 Place squash in an ungreased 13 X 9 baking dish.
  • Step #4 Cover up tightly with foil wrap.
  • Step #5 Bake for 30 to 40 mins or until squash is tender.
  • Step #6 Cool for 10-15 mins.
  • Step #7 Reduce oven temp to 375 degress F.
  • Step #8 Scoop out flesh of squash, leaving about 1/4 inch thick shell & set shells aside for now.
  • Step #9 Place flesh of squash in a medium bowl.
  • Step #10 Add sour cream, nutmeg & nuts if using, salt, mix until smooth.
  • Step #11 Fill each shell with the squash mixture.
  • Step #12 Sprinkle top each with 1 tbsp of brown sugar.
  • Step #13 Place filled shells in baking dish.
  • Step #14 Bake at 375 degrees for 15-20 mins or until thoroughly heated.
