Grilled Pears With Candied Pecans Over Mixed Greens Recipe

Ingredients
  • 1 tbsp red onions, minced .
  • fresh ground pepper .
  • 2 tsps fresh oregano, minced .
  • kosher salt .
  • 1 tsp shallots, minced .
  • 1 c water .
  • 1/3 c balsamic vinegar .
  • 5 c spring mixed salad greens .
  • 1/4 c crumbled blue cheese .
  • 3 tbsps olive oil .
  • 1 c pecans .
  • 1 c canola oil .
  • 1 tbsp fresh chives .
  • 1 c sugar .
  • 1 tsp sugar .
  • 4 pears, ripe, peeled

Directions
  • Step #1 Preheat over to 350 deg.
  • Step #2 For the pecans, boil together the water & sugar.
  • Step #3 Add the pecans & let simmer 5 mins.
  • Step #4 Drain & toast the pecans on a well-greased baking sheet until golden (about 10 mins).
  • Step #5 Set aside to cool.
  • Step #6 This can be done a few days ahead.
  • Step #7 For the dressing: Mix the vinegar, sugar, shallots, chives & onion.
  • Step #8 Slowly whisk in canola oil, & make sure the dressing is thoroughly mixd.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Set aside.
  • Step #11 This too can be made earlier.
  • Step #12 For the pears: cut into quarters & remove the seeds.
  • Step #13 Toss with olive oil & season this with salt & pepper.
  • Step #14 Either grill or pan fry until the pears are tender.
  • Step #15 Not mushy, but tender.
  • Step #16 In the pan would be approx 15 mins or so.
  • Step #17 Toss the salad with the dressing & mound the pears in the center of each plate.
  • Step #18 Top with candied pecans & crumbled blue cheese.
