Chicken With Rice (arroz Con Pollo) Recipe

Ingredients
  • 8 boneless chicken thighs, with skin
  • 1/2 c water
  • 1/2 tsp crushed red pepper flakes
  • 1 (4 oz) can sliced green chiles
  • 1 1/4 c chicken broth
  • 1/2 c olive oil
  • 1/2 (8 oz) jar pimiento-stuffed green olives, drained & sliced
  • 2 c sliced onion
  • 1 (28 oz) can sliced tomatoes
  • 2 1/2 tsps salt
  • 1/4 tsp saffron threads
  • 2 c converted long-grain white rice
  • 1 (4 oz) jar pimentos, drained
  • 3/4 c fresh peas
  • 1/2 tsp black pepper
  • 1 clove garlic, crushed

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Heat the olive oil in a Dutch oven over med-heat/flame.
  • Step #3 Sear the chicken until golden, then set aside.
  • Step #4 Stir in the onion, garlic, & red pepper flakes; cook this until the onions have softened, about 4 mins.
  • Step #5 Add the rice, pepper, & season this with salt, & saffron.
  • Step #6 Cook rice until golden, stirring constantly, about 10 mins.
  • Step #7 Stir in the tomatoes, green chiles, & chicken broth.
  • Step #8 Place chicken thighs on top, cover, then bring to a boil, & place this in the preheated oven.
  • Step #9 Bake for 1 hr in the preheated oven, pimentos, then sprinkle the peas, & olives on top.
  • Step #10 Pour in the water, but do not stir.
  • Step #11 Recover & continue baking until the chicken is fully cooked, about 20 mins.
