Spaetzle In Sage Brown Butter Recipe

Ingredients
  • 1 tsp salt .
  • 4 fresh sage leaves, Chiffinod .
  • 3 large eggs .
  • 1/4 tsp ground nutmeg .
  • 3/4 c cold whole milk .
  • 2 fresh sage leaves .
  • 2 c all-purpose flour .
  • 1/2 c unsalted butter

Directions
  • Step #1 Combine milk, salt & nutmeg in processor; mix until smooth, eggs, about 30 seconds.
  • Step #2 Add flour & mix until batter is just smooth, about 30 seconds (batter will be very thick & sticky).
  • Step #3 Bring large pot of salted water to boil.
  • Step #4 Working in batches, pour batter through slotted spoon held above boiling water, pressing with spatula to form strands.
  • Step #5 Stir carefully to prevent sticking.
  • Step #6 Simmer until spaetzle float to surface, then continue cooking 1 min longer.
  • Step #7 Using slotted spoon, transfer spaetzle to large buttered baking dish.
  • Step #8 (Can be made 2 hrs ahead.
  • Step #9 Let stand at about room temp.
  • Step #10 ).
  • Step #11 Cook butter & sage in heavy large skillet over med-heat/flame until golden brown, about 3 mins.
  • Step #12 Add spaetzle & toss until heated through.
  • Step #13 Spice up to taste with salt & pepper.
  • Step #14 Divide among plates.
  • Step #15 Garnish with fresh sage.
