Miso-seared Salmon With Edamame Sauce Recipe

Ingredients
  • 2 tbsps tamari or soy sauce .
  • 1/2 tsp salt .
  • 1 tbsp grapeseed oil or rice oil .
  • 4 (6 oz) salmon fillets, skin removed .
  • 2 tbsps fresh lemon juice .
  • 3 tbsps miso (light red or golden) .
  • 3/4 c vegetable broth .
  • 6 large garlic cloves, peeled .
  • 1/2 c silken tofu .
  • 2 c edamame (fresh or frozen shelled) .
  • 1/8 tsp fresh ground pepper

Directions
  • Step #1 1.
  • Step #2 In a small bowl, mix miso & tamari until smooth.
  • Step #3 Place salmon on a plate & coat with miso mixture; cover & put in the fridge 1 hr.

  • Step #5 In a small saucepan, cover garlic with cold water.
  • Step #6 Bring to a boil, & pour off water.
  • Step #7 Cover up with cold water again & bring to a boil.
  • Step #8 Reduce heat to low & let simmer until garlic is tender, about 10 mins; drain & set aside.

  • Step #10 Bring a large saucepan of water to a boil.
  • Step #11 Add edamame; reduce heat & let simmer 3 ½ mins; drain.
  • Step #12 4.
  • Step #13 In a food processor/blender, tofu, mixs edamame, & garlic.
  • Step #14 Process until smooth.
  • Step #15 With motor running, pour in broth.
  • Step #16 Add lemon juice, salt, & pepper; process to mix.
  • Step #17 Pour sauce into a saucepan; warm over low heat/flame.
  • Step #18 5.
  • Step #19 In a large nonstick skillet, heat oil over medium-high heat.
  • Step #20 Add salmon fillets & reduce heat to medium.
  • Step #21 Cook salmon until well browned & just cooked trough, 3-4 mins per side; serve this with edamame sauce.
