Cheese Filled Chicken Cutlets Recipe

Ingredients
  • 1 (8 oz) package mozzarella cheese, thinly sliced .
  • 1/4 tsp salt .
  • 5 tbsps butter, divided .
  • 1/2 lb mushrooms, thinly sliced .
  • 4 tbsps flour, divided .
  • 6 boneless chicken breast halves .
  • parsley sprigs (to garnish) .
  • 1/4 c white wine .
  • 1 chicken bouillon cube .
  • 1/2 c milk .
  • 1/2 c water .
  • 1/8 tsp pepper

Directions
  • Step #1 Cut each breast half into 2 cutlets.
  • Step #2 Pound each to 1/8 inch thick.
  • Step #3 Mix salt with 3 tbsp flour & coat chicken with this mixture.
  • Step #4 In skillet, add cutlets a few at a time & saute until lightly browned on both sides, melt 3 tbsp butter, adding more butter if necessary.
  • Step #5 Remove cutlets from the skillet.
  • Step #6 Arrange cheese slices on 6 cutlets; top this with remaining cutlets & skewer layers together with toothpicks.
  • Step #7 Set aside.
  • Step #8 In the drippings, melt 2 tbsp more butter.
  • Step #9 Add mushrooms & cook this until tender, stirring every once in awhile.
  • Step #10 Stir in pepper & 1 tbsp flour; mix well.
  • Step #11 Gradually stir in the water, wine, milk, & bouillon.
  • Step #12 Heat to boiling, stirring to loosen brown bits from bottom of skillet.
  • Step #13 Return cutlets to skillet; heat to boiling.
  • Step #14 Reduce heat to low; cover & let simmer for 5 mins or until cheese is melted & chicken is thoroughly cooked.
  • Step #15 Carefully remove toothpicks.
  • Step #16 Spoon cutlets & sauce onto a large platter; garnish with parsley sprigs.
