Cheese Filled Chicken Cutlets Recipe

Step #1 Cut each breast half into 2 cutlets.
Step #2 Pound each to 1/8 inch thick.
Step #3 Mix salt with 3 tbsp flour & coat chicken with this mixture.
Step #4 In skillet, add cutlets a few at a time & saute until lightly browned on both sides, melt 3 tbsp butter, adding more butter if necessary.
Step #5 Remove cutlets from the skillet.
Step #6 Arrange cheese slices on 6 cutlets; top this with remaining cutlets & skewer layers together with toothpicks.
Step #7 Set aside.
Step #8 In the drippings, melt 2 tbsp more butter.
Step #9 Add mushrooms & cook this until tender, stirring every once in awhile.
Step #10 Stir in pepper & 1 tbsp flour; mix well.
Step #11 Gradually stir in the water, wine, milk, & bouillon.
Step #12 Heat to boiling, stirring to loosen brown bits from bottom of skillet.
Step #13 Return cutlets to skillet; heat to boiling.
Step #14 Reduce heat to low; cover & let simmer for 5 mins or until cheese is melted & chicken is thoroughly cooked.
Step #15 Carefully remove toothpicks.
Step #16 Spoon cutlets & sauce onto a large platter; garnish with parsley sprigs.
