Greek Grilled Pita Salad Recipe

Ingredients
  • 1/3 c pitted kalamata olives, cut in half .
  • 3 tbsps red wine vinegar .
  • 2 (7 inch) pita breads, without pockets .
  • 1 tbsp sliced fresh oregano .
  • 1 tsp minced garlic .
  • 1/4 c coarsely sliced Italian parsley .
  • 1 c thinly sliced red onions .
  • 1/2 tsp salt .
  • 6 tbsps extra virgin olive oil .
  • 1 large cucumber, peeled & sliced crosswise .
  • 1/3 c crumbled feta cheese .
  • 2 large vine ripe tomatoes, cut in wedges .
  • 1 pinch dried red pepper flakes

Directions
  • Step #1 Preheat the grill.
  • Step #2 In a large bowl, garlic, olive oil, whisk together the vinegar, pepper flakes, salt, cheese & oregano.
  • Step #3 Set aside.
  • Step #4 Place the whole pitas on the hot grill & cook on each side for about 1 1/2 mins, or until nice grill marks form & the pitas are toasty.
  • Step #5 REmove & cut each pita in half, & then into 1 inch strips.
  • Step #6 Add the tomatoes, olives, onion, cucumber, parsley & grilled pita strips to the bowl of vinaigrette & toss together well.
  • Step #7 Serve as soon as possible.
