Stonewall Kitchen Harvest Peach Muffins Recipe

Ingredients
  • 3/4 c 2% low-fat milk .
  • 1 1/2 c flour .
  • 2 1/2 tsps baking powder .
  • 2 large fresh peaches .
  • 1 c sugar .
  • 1/4 tsp vanilla .
  • 4 tbsps unsalted butter

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Place 10 c of a muffin tin with paper liners.
  • Step #3 To peel peaches, drop into boiling water for 30 seconds, then carefully transfer to a bowl of ice water.
  • Step #4 When cool, peel off the slippery skin.
  • Step #5 Dice & set aside.
  • Step #6 Melt butter & set aside.
  • Step #7 Whisk together flour & baking powder in a small bowl.
  • Step #8 Set aside.
  • Step #9 Whisk together sugar, milk, egg & vanilla In a large-ish bowl.
  • Step #10 Whisk in melted butter, the fold in peaches.
  • Step #11 Gently fold in flour mixture until just mixed.
  • Step #12 Do not overmix.
  • Step #13 Fill 10 muffin tins until almost full.
  • Step #14 Bake 18-20 mins or until a toothpick inserted into center of a muffin comes out clean.
  • Step #15 Cool on rack 5 mins before removing from pan.
