My Lubia Chala With Kefta Recipe

Ingredients
  • 1 (15 oz) can sliced tomatoes, I use fresh in season .
  • 1/8 tsp ground ginger .
  • 1 tsp salt .
  • 1 tbsp fresh lemon juice .
  • 2 tsps sweet paprika .
  • 1 lb lean ground beef .
  • 1 tsp fresh ground pepper .
  • 3/4 lb green beans, trimmed & cut in half .
  • 1 c sliced carrots (optional) .
  • 3 garlic cloves, mashed to a puree or garlic, minced finely .
  • 1 tsp turmeric

Directions
  • Step #1 Heat 12-inch nonstick skillet over medium-high heat, 2 mins.
  • Step #2 Add beef; sprinkle with salt & pepper.
  • Step #3 Cook 3 mins, stirring, until no longer pink.
  • Step #4 Add garlic & spices; cook 1 min.
  • Step #5 Add tomatoes, green beans & carrots; cover skillet & bring to boil.
  • Step #6 Reduce heat to medium & let simmer 15 mins, stirring once.
  • Step #7 Stir in lemon.
  • Step #8 Make sure that the green beans are soft, no crisp green beans are served here! I have also done this recipe with canned green beans & have found it to be very good & a good way to have green beans out of season.
  • Step #9 Use 2 cans if using canned beans.
