Scrambled Eggs With Fines Herbes And Tomatoes Recipe

Ingredients
  • 3 tomatoes, peeled, seeded, sliced, & drained (home grown are best) .
  • 12 large eggs .
  • 1 tsp salt .
  • 2 tbsps butter .
  • 2 tbsps Dijon mustard .
  • 3 tbsps fresh herbs, finely sliced (I used parsley, tarragon & chives) .
  • 3 tbsps creme fraiche (or heavy creme) .
  • 1/2 tsp fresh ground black pepper

Directions
  • Step #1 Break the eggs into a large mixing bowl, reserving 2 yolks in a smaller separate bowl.
  • Step #2 Add the herbs (reserving a little for garnishing), salt & pepper to the large bowl of eggs.
  • Step #3 Mix with a whisk.
  • Step #4 In the smaller bowl of egg yolks, whisk in the mustard & creme fraiche.
  • Step #5 Mix well.
  • Step #6 Melt the butter In a large-ish skillet.
  • Step #7 When melted, add the large bowl of eggs & cook, stirring constantly, until creamy & just barely thickened.
  • Step #8 Add the yolk mixture & the tomatoes to the skillet.
  • Step #9 Stir once or twice to incorporate, & remove this from the heat.
  • Step #10 They will continue to cook off the heat.
  • Step #11 Prepare the plate, serve the eggs garnished with some of the herbs.
