Step #1 Add tea & currants into a small bowl.
Step #2 Allow to steep untill tea is cold & currents plump.
Step #3 Sift flour into a clean bowl add sugar & mix well.
Step #4 Make a well in the center, add tea mixture & egg.
Step #5 Mix with a woodenspoon till all the ingredients are incorporated & the batter is lump free.
Step #6 Grease a frying pan with a little butter at a time.
Step #7 Drop a tbsp of batter at a time, try to fit a few at a time in the frying pan.
Step #8 cook over med-heat/flame for 2-3 mins or untill bubbles appear on the surface.
Step #9 Turn & cook the other side.
Step #10 Repeat with remaining batter.
Step #11 Serve with whipped cream.
