Currant And Tea Crumpets Recipe

Ingredients
  • 4 tbsps sugar .
  • 1/2 c of hot strong black tea .
  • 2 tbsps currants .
  • 1 egg, lightly beaten .
  • 1 c self raising flour .
  • 2 tbsps butter

Directions
  • Step #1 Add tea & currants into a small bowl.
  • Step #2 Allow to steep untill tea is cold & currents plump.
  • Step #3 Sift flour into a clean bowl add sugar & mix well.
  • Step #4 Make a well in the center, add tea mixture & egg.
  • Step #5 Mix with a woodenspoon till all the ingredients are incorporated & the batter is lump free.
  • Step #6 Grease a frying pan with a little butter at a time.
  • Step #7 Drop a tbsp of batter at a time, try to fit a few at a time in the frying pan.
  • Step #8 cook over med-heat/flame for 2-3 mins or untill bubbles appear on the surface.
  • Step #9 Turn & cook the other side.
  • Step #10 Repeat with remaining batter.
  • Step #11 Serve with whipped cream.
