Zee's Malaysian Chicken Curry Recipe

Ingredients
  • 5 tbsps oil, for fry .
  • 400F ml coconut milk .
  • 3 medium potatoes, cut into bite sizes .
  • salt & pepper, for taste .
  • salt & pepper, for marinate the chicken .
  • 3 tbsps curry powder (or more if you like more spicy!) .
  • 1 small onion, cut finely .
  • 600 g chicken breasts, cut into strips

Directions
  • Step #1 Boil potatoes until half cooked.
  • Step #2 When they are cooked, drain water, & heat the pan with 3 tbsps oil & fry the potatoes for about 5 mins.
  • Step #3 Set aside.
  • Step #4 Marinate chicken well with salt & pepper.
  • Step #5 While marinate chicken, heat pan & fry onion untill soft.
  • Step #6 Add salt & curry powder & stir them well.
  • Step #7 Add the chicken in & stir, then add coconut milk & stir well.
  • Step #8 Add potatoes.
  • Step #9 Simmer for about 15 mins or so, make sure chicken & potatoes are cooked.
  • Step #10 Taste it & add more salt & pepper or curry powder if you need.
  • Step #11 Serve with rice.
