Coconut Lime-curd Bars Recipe

Ingredients
  • 1/2 c unsalted butter .
  • confectioners' sugar, for dusting .
  • 3 tbsps lime zest .
  • 1 c sweetened flaked coconut .
  • 1/2 c confectioners' sugar .
  • 3/4 c all-purpose flour .
  • 2 large eggs .
  • 2 tbsps cornstarch .
  • 2 tbsps all-purpose flour .
  • 3/4 c granulated sugar .
  • 1 tsp vanilla

Directions
  • Step #1 Heat oven to 350.
  • Step #2 Combine the coconut, 3/4 c flour, 1/2 c confectioners' sugar, 1 tbsp cornstarch & butter & mix until a crumbly dough is formed.
  • Step #3 Press fimly into a greased 8x8" pan.
  • Step #4 Bake just unil golden, about 12 mins.
  • Step #5 Sift together the granulated sugar, the remaining 1 tbsp cornstarch & 2 tbsp of flour.
  • Step #6 In a separate bowl, lime zest, beat the eggs, lime juice & vanilla.
  • Step #7 Slowly pour the egg mixture into the flour mixture, whisking to avoid lumps.
  • Step #8 POur the filling over the baked crust.
  • Step #9 Bake until the lime curd is set in the center, about 22 mins.
  • Step #10 Cool completeley in the refrigeratr, about 2 hrs.
  • Step #11 Cut into 16 bars & dust with powdered sugar before serving.
