Potato And Bacon Tourtie're Recipe

Ingredients
  • 1 c sour cream .
  • 2 1/2 c flour .
  • 1 tbsp fresh thyme (or 1/2 tsp dried) .
  • 1/2 tsp pepper .
  • 1 egg, beaten .
  • 1/2 tsp salt .
  • 1/2 lb butter, cut into cubes .
  • 3 slices bacon, cooked crisp & crumbled .
  • 2 tbsps milk .
  • 1/2 c sliced parsley .
  • 5 medium potatoes, peeled & sliced thin .
  • 1/2 c sliced green onions, whites & some green .
  • 1 tbsp snipped fresh chives .
  • 1/2 c ice water .
  • 1/2 tsp pepper .
  • 1 tsp salt

Directions
  • Step #1 Make the pastry dough by combing flour, 1 tsp salt, ½ pepper & thyme in the bowl of food processor/blender with a steel blade.
  • Step #2 Add butter, cube at a time & process until mixture resembles coarse meal.
  • Step #3 With the motor running, slowly pour in the ice water until dough forms a ball.
  • Step #4 Remove the dough & wrap in plastic wrap.
  • Step #5 Refrigerate about 30 mins until firm.
  • Step #6 (Dough can be made up to 1 day in advance & stored in refrigerator.
  • Step #7 ).
  • Step #8 Meanwhile, place potatoes in a bowl with salted water to cover & let this stand at about room temp fro at least 1 hr.
  • Step #9 Divide the chilled dough in half & roll out 1 half on a lightly floured board to ¼ inch thickness.
  • Step #10 Trim the pastry to a 10 inch circle.
  • Step #11 Place the circle on an ungreased baking sheet & set aside.
  • Step #12 Preheat oven to 375.
  • Step #13 Drain the potatoes & rinse & pat dry.
  • Step #14 Put potatoes, green onions, parsley, bacon, salt & pepper In a large-ish bowl.
  • Step #15 Toss carefully to mix.
  • Step #16 Arrange this mixture on the pastry circle leaving a 1 inch border all around.
  • Step #17 Roll out the second half of dough exactly like the first half.
  • Step #18 Trim to 13 inch circle & place on top of potato mixture.
  • Step #19 Gently crimp the crust together to seal the pie.
  • Step #20 Brush the beaten egg over the top crust.
  • Step #21 With a paring knife, cut evenly spaced ½ inch long vents, parallel to the edge of the pie, around a 4 inch circle in the center of the pie.
  • Step #22 Bake 55 mins until the crust is browned.
  • Step #23 Stir together the sour cream, milk & chives in a small bowl.
  • Step #24 When the pie is done, cut out & remove the center circle of the top crust that you outlined with the vents.
  • Step #25 Pour the sour cream mixture into the hole.
  • Step #26 Let is rest for 5 mins before cutting into wedges to serve.
