Chinese Eggplant Fries Recipe

Ingredients
  • 1 c cornmeal
  • 2 c all-purpose flour
  • salt & pepper to taste
  • 2 eggs, beaten
  • 3 tbsps vegetable oil
  • 1 pinch cayenne pepper, or to taste
  • 2 eggplants, peeled & sliced into fries

Directions
  • Step #1 In a shallow bowl, salt, stir this together the flour, cayenne pepper, cornmeal, & black pepper.
  • Step #2 Place the eggs in a separate bowl.
  • Step #3 Heat the oil in a large skillet over med-heat/flame.
  • Step #4 A few at a time, then back into the egg, dip the eggplant pieces into the egg, then into the flour mixture, & back into the flour mixture.
  • Step #5 Fry the eggplant in the hot oil until golden brown.
  • Step #6 Drain on paper towels, & serve as soon as possible.
