Ingredients
2 tbsps cornstarch .
salt & pepper .
3 green onions, sliced .
1/2 c chicken broth .
2/3 c creamy peanut butter .
1 large red bell pepper, seeded & sliced into strips .
1/2 c sliced roasted peanuts .
1 large onion, coarsely sliced .
6 chicken breast halves, cut into 1/2 inch strips (boneless & skinless) .
1 tbsp ground cumin .
3 garlic cloves, minced .
1/4 c sliced fresh cilantro .
1/4 c lime juice .
1 tbsp soy sauce .
1/4 c soy sauce .
1/2 tsp red pepper flakes
Directions
Step #1 Place the chicken breast strips, bell pepper & onion into a slow cooker (aka crockpot).
Step #2 Pour in the chicken broth & 1/4 c of soy sauce, then season this with cumin, garlic, red pepper flakes, salt & pepper.
Step #3 Stir to mix, then cover & cook on Low for 4 1/2 to 5 hrs.
Step #4 Remove 1 c of the liquid from the slow cooker (aka crockpot), peanut butter, & mix this with the cornstarch, 1 tbsp of soy sauce & lime juice.
Step #5 This should mix into a fairly thick sauce.
Step #6 Stir the sauce back into the slow cooker (aka crockpot), & place the lid on the pot.
Step #7 Cook on High for 30 mins.
Step #8 Garnish with green onions, cilantro & peanuts before serving.
