Crock Pot Thai Chicken Recipe

Ingredients
  • 2 tbsps cornstarch .
  • salt & pepper .
  • 3 green onions, sliced .
  • 1/2 c chicken broth .
  • 2/3 c creamy peanut butter .
  • 1 large red bell pepper, seeded & sliced into strips .
  • 1/2 c sliced roasted peanuts .
  • 1 large onion, coarsely sliced .
  • 6 chicken breast halves, cut into 1/2 inch strips (boneless & skinless) .
  • 1 tbsp ground cumin .
  • 3 garlic cloves, minced .
  • 1/4 c sliced fresh cilantro .
  • 1/4 c lime juice .
  • 1 tbsp soy sauce .
  • 1/4 c soy sauce .
  • 1/2 tsp red pepper flakes

Directions
  • Step #1 Place the chicken breast strips, bell pepper & onion into a slow cooker (aka crockpot).
  • Step #2 Pour in the chicken broth & 1/4 c of soy sauce, then season this with cumin, garlic, red pepper flakes, salt & pepper.
  • Step #3 Stir to mix, then cover & cook on Low for 4 1/2 to 5 hrs.
  • Step #4 Remove 1 c of the liquid from the slow cooker (aka crockpot), peanut butter, & mix this with the cornstarch, 1 tbsp of soy sauce & lime juice.
  • Step #5 This should mix into a fairly thick sauce.
  • Step #6 Stir the sauce back into the slow cooker (aka crockpot), & place the lid on the pot.
  • Step #7 Cook on High for 30 mins.
  • Step #8 Garnish with green onions, cilantro & peanuts before serving.
