My Lower Fat Martian Cookies Recipe

Ingredients
  • 2 c whole wheat pastry flour .
  • 1 c butterscotch chips .
  • 2 c quick-cooking oatmeal .
  • 4 egg whites .
  • 1 c chocolate chips .
  • 5 tbsps butter .
  • 1/2 c Splenda sugar substitute .
  • 2 c coarsely shredded unpeeled zucchini .
  • 1/2 c unrefined unbleached cane sugar .
  • 2 tsps cinnamon .
  • 1 tsp baking soda .
  • 1/2 c white sugar .
  • 1/2 c unsweetened applesauce .
  • 1 c white bean flour .
  • 1/8 c unsweetened applesauce .
  • 1 tsp salt .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 With a mixer mix the butter & applesauce.
  • Step #3 Add the sugars & the splenda & beat well.
  • Step #4 It will never get fluffy & it might have little specks of butter in with the applesauce.
  • Step #5 This is just fine.
  • Step #6 Add the egg whites & the vanilla & mix well.
  • Step #7 Add the 2 flours, the baking soda, the cinnamon, & the salt.
  • Step #8 Using the low setting on the mixer mix in the flour.
  • Step #9 Using a spoon add the oatmeal, zuchinni, & chips.
  • Step #10 (I ran out of chocolate & used more butterscotch.
  • Step #11 Use what you would like to end up with 2 c of chips.
  • Step #12 ).
  • Step #13 Drop onto an ungreased cookie sheet & bake for 12-14 mins or until they are starting to brown.
