Fresh Coconut Cake Recipe

Ingredients
  • 1 c sugar .
  • 4 white cake layers (or yellow) .
  • 1 coconut (only substitue fresh frozen coconut if you can find it, do not use dried) .
  • 2 c sour cream .
  • Frosting .
  • 16 oz Cool Whip

Directions
  • Step #1 Bake cake & cool completely.
  • Step #2 Open coconut, remove outer hard shell, pare inner brown shell, rinse & grate.
  • Step #3 Mix sugar, sour cream & coconut.
  • Step #4 Fold in cool whip.
  • Step #5 Spread frosting between layers of cake & outsides of cake.
  • Step #6 Refrigerate overnight.
