Mediterranean Bulgur Salad Recipe

Ingredients
  • 5 small artichoke hearts, quartered .
  • 1/3 c fresh basil, sliced .
  • 1 tbsp white wine vinegar .
  • 1 small cucumber, seeded & sliced .
  • 1/4 tsp salt .
  • 2 c water .
  • 1 c bulgur .
  • 1 tbsp olive oil .
  • 1 tbsp fresh lemon juice .
  • salt & black pepper .
  • 1 medium fresh tomato, sliced

Directions
  • Step #1 Pour water into a medium saucepan with a tight-fitting lid.
  • Step #2 Add salt & bring to a boil over high heat.
  • Step #3 When water boils, add bulgur & remove this from heat.
  • Step #4 Cover up & let this stand 30 mins, or until all the water has been absorbed.
  • Step #5 In a large bowl, mix bulgur with all remaining ingredients & stir this to mix thoroughly.
  • Step #6 This can be served at about room temp or chilled.
  • Step #7 Top with fresh parmesan or crumbled feta, if desired.
