Vegetarian Fajita Feast Recipe

Ingredients
  • 1 tsp salt .
  • 1 medium summer squash .
  • 1/2 c fresh sour cream .
  • 1/2 tbsp tequila .
  • 1/2 tbsp fresh oregano, sliced .
  • Zesty Sour Cream .
  • Lime Marinade .
  • 1 tbsp fresh cilantro, minced (NOT dried) .
  • 1 tsp chili powder .
  • 1/4 c water .
  • 1 tsp cumin seeds, toasted & ground .
  • Vegetables .
  • 1 green bell pepper (or orange, yellow) .
  • 6 tbsps fresh lime juice .
  • 1 yellow onion .
  • 2 tbsps safflower oil .
  • 1 medium zucchini .
  • 1 red bell pepper .
  • 1 garlic clove, finely minced

Directions
  • Step #1 For marinade, mix all ingredientgs together well & set aside.
  • Step #2 Combine the sour cream ingredients & stir well.
  • Step #3 Set aside.
  • Step #4 To prepare vegetables for cooking, cut vegetables to uniform size strips 1/4 inch wide by 3 inches long.
  • Step #5 Combine all the cut vegetables In a large-ish bowl.
  • Step #6 Preheat a large skillet or wok on high heat then add 2 tbsps of the oil.
  • Step #7 Add the vegetables, & saute for 2 mins.
  • Step #8 Next carefully add half of the lime marinade & saute another 2 mins.
  • Step #9 The vegetables are finished cooking when they are heated through entirely & still have a crunchy texture, but not mushy.
  • Step #10 If the vegetables start to dry out while cooking, add a little bit more of the marinade.
  • Step #11 Serve the fajita mixture with a choice of warmed corn or whole wheat tortillas.
  • Step #12 (I love spelt tortillas!).
  • Step #13 Serve sour cream on the side.
