Step #1 In an extra large frypan or Dutch oven melt butter & saute the onions, celery, garlic, & green pepper until soft (about 5-6 mins).
Step #2 Slowly add in the chicken broth, mushrooms (if using) & corn niblets; cover & let simmer for about 5-6 mins.
Step #3 Add in black pepper to taste.
Step #4 Remove from heat & add in the two boxes of chicken stuffing mix, & and toss with a wooden spoon until the bread crumbs have absorbed the broth.
Step #5 Cover up with a lid & let this stand for 10 mins.
Step #6 If you find it too dry just add in more broth.
Step #7 Fluff with a spoon or fork.
Step #8 Spice up with salt if needed & serve.
