Ingredients
1 1/2 lbs beef flank steak .
1/3 c sliced dill pickles .
4 tsps heavy German mustard or Dijon mustard, will do .
6 slices bacon, sliced .
1/4 c flour .
3/4 c sliced onions .
1 (13 3/4 oz) can beef broth
Directions
Step #1 With meat mallet or rolling pin, flatten meat to about a 10x8 rectangle.
Step #2 Spread with mustard.
Step #3 In large skillet on medium high heat, cook bacon & onion til bacon is crisp.
Step #4 Pour off fat reserving 1/4 c in skillet.
Step #5 Spread bacon mix over meat.
Step #6 Sprinkle top pickle on top.
Step #7 Roll up meat from short end & secure with string or turkey pins.
Step #8 Place meat roll in skillet over medium high heat in reserved bacon fat & brown on all sides.
Step #9 Remove to 13x9 baking dish.
Step #10 Stir flour into fat in skillet & mix until smooth, slowly stirring in beef broth.
Step #11 Cook & stir over med-heat/flame until thickened.
Step #12 Pour sauce over beef roll.
Step #13 Cover up & bake this at 325F degrees for 1 1/2 hrs or until done.
Step #14 Let stand 10 mins before slicing.
Step #15 Skim fat from sauce, strain & serve this with meat.
