Easy German Beef Roulade Recipe

Ingredients
  • 1 1/2 lbs beef flank steak .
  • 1/3 c sliced dill pickles .
  • 4 tsps heavy German mustard or Dijon mustard, will do .
  • 6 slices bacon, sliced .
  • 1/4 c flour .
  • 3/4 c sliced onions .
  • 1 (13 3/4 oz) can beef broth

Directions
  • Step #1 With meat mallet or rolling pin, flatten meat to about a 10x8 rectangle.
  • Step #2 Spread with mustard.
  • Step #3 In large skillet on medium high heat, cook bacon & onion til bacon is crisp.
  • Step #4 Pour off fat reserving 1/4 c in skillet.
  • Step #5 Spread bacon mix over meat.
  • Step #6 Sprinkle top pickle on top.
  • Step #7 Roll up meat from short end & secure with string or turkey pins.
  • Step #8 Place meat roll in skillet over medium high heat in reserved bacon fat & brown on all sides.
  • Step #9 Remove to 13x9 baking dish.
  • Step #10 Stir flour into fat in skillet & mix until smooth, slowly stirring in beef broth.
  • Step #11 Cook & stir over med-heat/flame until thickened.
  • Step #12 Pour sauce over beef roll.
  • Step #13 Cover up & bake this at 325F degrees for 1 1/2 hrs or until done.
  • Step #14 Let stand 10 mins before slicing.
  • Step #15 Skim fat from sauce, strain & serve this with meat.
