Cajun Pork Tenderloin With Braised Greens Recipe

Ingredients
  • 1 pinch red pepper flakes .
  • 3 slices bacon, thinly sliced .
  • 1 1/2 c low sodium chicken broth, plus .
  • Braised Greens .
  • fresh ground black pepper .
  • 2 tbsps extra-virgin olive oil .
  • 2 garlic cloves, smashed .
  • 2 tbsps cajun seasoning .
  • Pork .
  • 1 small red onion, sliced .
  • 1 large tomato, sliced .
  • 1/2 c chicken stock .
  • 8 c kale, roughly sliced .
  • 2 (14 oz) pork tenderloins, each halved crosswise .
  • 1 tsp kosher salt .
  • 2 tsps kosher salt .
  • 1/4 c low sodium chicken broth .
  • 1 tsp dried oregano .
  • store-bought dinner rolls or biscuits .
  • 2 tsps cider vinegar

Directions
  • Step #1 FOR THE GREENS: Cook the bacon over med-heat/flame In a large-ish skillet until browned, about 6 mins.
  • Step #2 Add the onion, pepper flakes & tomato, oregano, garlic, salt, & cook this until vegetables are tender, about 5 mins.
  • Step #3 Stir in the kale & 1 1/2 c broth, cover, cook this until wilted, about 8 mins.
  • Step #4 Stir in 1/4 c broth & vinegar, & season this with salt & pepper, to taste.
  • Step #5 FOR THE PORK: Preheat the oven to 350 degrees F.
  • Step #6 Combine the Cajun spice, 1 tbsp of the olive oil, & salt to make paste.
  • Step #7 Rub the pork with spice paste.
  • Step #8 Heat a skillet over medium-high.
  • Step #9 Add the remaining olive oil & sear the pork, turning until all sides are golden brown, about 2 to 3 mins total.
  • Step #10 Roast until an instant-read thermometer inserted into the meat registers 150 degrees F, about 10 to 12 mins.
  • Step #11 Set aside for 5 mins to rest on a cutting board.
  • Step #12 Deglaze the pan with 1/2 c chicken broth.
  • Step #13 Reduce a little & swirl in 2 tbsps butter.
  • Step #14 Thinly slice the pork, divide among 4 plates.
  • Step #15 Drizzle with pan sauce & serve this with the greens & dinner rolls or biscuits.
