Apple-red Cabbage Recipe

Ingredients

2 1/2 lbs red cabbage, & rinsed, with outer leaves & & core removed .
1/3 c apple cider vinegar .
1/4 tsp black pepper .
1/2 c raisins .
1 1/2 c onions .
1/2 tsp ground ginger .
2-3 medium apples .
1/4 c white sugar .
1/2 tsp salt

Directions

Step #1 Cut cabage lengthwise, remove core.
Step #2 Shred cabbage, set aside, Pare, quarter & core apples & cut into small pieces.
Step #3 In large saucepot, about 5-10 mins, melt some butter, add onion & cook carefully, add sugar & stir until it begins to caramelize.
Step #4 Add cabbage, vinegar,apple, salt, pepper & ground ginger.
Step #5 Cover up & let simmer, stirring every once in awhile, for about 15-20 mins.
Step #6 Stir in raisins & cook for about 10 mins longer, add a little water if needed.
