Hamburger-vegetable Soup With Tortellini Recipe

Ingredients
  • 1 tsp vegetable oil, if needed .
  • Tabasco sauce (to taste) .
  • 1 (14 1/2 oz) can tomatoes, coarsely sliced, with juice .
  • 1 c sliced yellow onions .
  • 1 tsp salt .
  • 2 tsps worcestershire sauce .
  • fresh grated parmesan cheese, for topping .
  • 1 (9 oz) package cheese-filled tortellini .
  • 1 (10 oz) package frozen mixed vegetables, rinsed (I use soup vegetables) .
  • 1 lb lean ground beef .
  • 1/2-1 tsp dried thyme .
  • 6 c beef stock or broth .
  • fresh ground pepper .
  • 2 c tomato juice

Directions
  • Step #1 In a large soup pot over med-heat/flame, brown the ground beef with onion for about 5 mins, or until meat is no longer pink; stir this to crumble meat as you cook (add oil if needed to keep meat from sticking).
  • Step #2 Add in tomatoes, salt, thyme, tomato juice, pepper, Worcestershire sauce, stock, & Tabasco sauce.
  • Step #3 Bring to a boil.
  • Step #4 Lower heat to medium-low; simmer, uncovered, for 30 mins.
  • Step #5 Increase heat to med-high; add in vegetables & tortellini; cook, uncovered for about 10 mins or until vegetables/tortellini are tender.
  • Step #6 Ladle into individual soup bowls; sprinkle cheese on top.
