Ingredients
2 eggs .
1 1/2 tsps almond extract .
1 1/2 c sifted flour .
1/4 c powdered sugar .
almond paste .
1/3 c raspberry jam (optional) .
1/2 c butter or margarine, softened .
1/4 c egg whites, unbeaten .
1 c blanched almonds .
1/4 c butter or margarine, softened .
3 tbsps granulated sugar
Directions
Step #1 Using a very fine blade of food sliced, grind almonds 3 times.
Step #2 Blend with powdered sugar, unbeaten egg whites, 1 egg, 1/4 c butter & almond extract.
Step #3 Refrigerate this mixture.
Step #4 In small bowl, with electric mixer on medium, mix 1/2 c butter with granulated sugar & 1 egg.
Step #5 Fold in flour, put in the fridge this dough 15 mins.
Step #6 On lightly floured wax paper, roll 2/3 of dough into 11 inch circle, 1/8 inch thick.
Step #7 Place dough side in 9 inch layer cake pan.
Step #8 Carefully pull off paper.
Step #9 Fit in pan; patch if needed to make the top even.
Step #10 Spread jam, then almond paste over dough on pan bottom.
Step #11 Roll reserved third of dough into rectangle 1/8 inch thick.
Step #12 With pastry wheel, cut 6- 8x3/4 inch strips.
Step #13 Lay 3 strips, 1 1/4 inch apart, over almond paste; lay rest at right angles.
Step #14 Re-roll pastry trimmings; cut 5- 5x3/4 inch strips.
Step #15 Place, against inside edge of pan; with pastry wheel, end to end, trim even with top of cake.
Step #16 Bake at 350 degrees for 45 mins, cool in pan.
Step #17 With spatula, carefully lift out cake.
Step #18 Cut into wedges & serve.
