Crock Pot Southwestern Chicken Recipe

Ingredients
  • 1 (15 1/4 oz) Mexican-style corn, drained .
  • hot cooked rice (optional) .
  • 1 (15 1/4 oz) can corn, drained .
  • 16 oz chunky salsa, your choice .
  • shredded cheddar cheese (optional) .
  • 6 boneless skinless chicken breast halves .
  • 1 (15 1/4 oz) can black beans, rinsed & drained .
  • flour tortillas (optional)

Directions
  • Step #1 Combine the corn, beans, & half of the salsa in a lightly greased crock pot.
  • Step #2 Top with the chicken.
  • Step #3 Pour remaining salsa over chicken.
  • Step #4 Cover up & cook first hr on high, then three more hrs on high or 6 hrs on low.
  • Step #5 Serve with warm tortillas & cheese or over rice.
