Spuzzerella Chicken Recipe

Ingredients
  • 2 slices whole wheat bread .
  • 1 (10 oz) box frozen spinach .
  • 1 dash dried thyme (to taste) .
  • 2 tbsps light butter, melted .
  • 4 tsps shredded parmesan cheese .
  • 1 dash garlic powder (to taste) .
  • 1 c shredded part-skim mozzarella cheese .
  • 1 lb chicken tenders (8) .
  • toothpicks .
  • 1 dash dried basil (to taste) .
  • 1 dash dried oregano (to taste) .
  • butter-flavored cooking spray .
  • 2 tbsps shredded parmesan cheese .
  • 1 c sliced mushrooms

Directions
  • Step #1 Place chicken tenders between two sheets of plastic wrap.
  • Step #2 Pound to 1/4 inch thickness.
  • Step #3 Set aside.
  • Step #4 Thaw spinach according to direction.
  • Step #5 Drain well.
  • Step #6 Set aside.
  • Step #7 Spray frying pan with cooking spray.
  • Step #8 Sautee mushrooms until limp.
  • Step #9 Sprinkle top about 2 tbsps of mozzerella & 1 tsp of parmesan cheese on each chicken tender.
  • Step #10 Divide mushrooms & spinach onto chicken breasts, too.
  • Step #11 Push the down filling into the tenders.
  • Step #12 Fold the long sides in & roll the chicken up jelly-roll style starting from a short side.
  • Step #13 Secure with toothpicks.
  • Step #14 Place chicken in a dish & freeze for 20 min.
  • Step #15 Preheat oven to 400F degrees F.
  • Step #16 While chicken is chilling, make bread crumbs: tear bread into pieces & pulse with the 2 tablesoons of parmesan cheese & seasonings in a food processor/blender to make crumbs.
  • Step #17 Remove chicken from freezer & dip into melted butter, turning to coat.
  • Step #18 Dredge in bread crumbs.
  • Step #19 Place chicken in a baking pan.
  • Step #20 Spray with cooking spray & bake in a 400F degree F oven about 10 to 15 mins.
