Ingredients
  • 1 c confectioners' sugar
  • 2 tsps vanilla extract
  • 2 tsps baking powder
  • 1 pinch salt
  • 1/2 c vegetable oil
  • 1 c semisweet chocolate chips
  • 4 eggs
  • 2 c all-purpose flour
  • 4 (1 oz) squares unsweetened chocolate, melted
  • 2 c white sugar

Directions
  • Step #1 In a medium bowl beat eggs & sugar until light.
  • Step #2 Stir in the oil, vanilla, melted chocolate.
  • Step #3 Sift together the flour, baking powder & salt; stir in theto the chocolate mixture.
  • Step #4 Finally, stir in the the chocolate chips.
  • Step #5 Refrigerate dough until firm.
  • Step #6 This will take anywhere from an hr in the freezer or overnight in the refrigerator.
  • Step #7 Preheat oven to 350 degrees F (175 degrees C).
  • Step #8 Shape dough into 1 inch balls.
  • Step #9 Roll them in confectioners' sugar until heavily coated.
  • Step #10 Place 2 inches apart on cookie sheets & bake for 11 to 13 mins in the preheated oven.
  • Step #11 Cookies should be firm to touch.
