Spanish Mushrooms In Garlic Sauce (tapas) Recipe

Ingredients
  • 1/2 lb mushrooms .
  • 2 tbsps finely sliced parsley .
  • 3 tbsps olive oil .
  • 2 tsps freshly squeezed & strained lemon juice .
  • salt .
  • 1/2 dried hot red chili pepper, seeded & cut into 3 pieces .
  • 1 1/2 tbsps all-purpose flour .
  • 1 c beef broth .
  • 2 medium garlic cloves, finely sliced

Directions
  • Step #1 Trim off any tough ends of the mushroom stems.
  • Step #2 Wipe the mushrooms clean with dampened paper towels.
  • Step #3 If the mushrooms are large, halve or quarter them.
  • Step #4 Set aside.
  • Step #5 In a medium-sized heavy skillet or fire proof casserole heat 2 Tablespoons of the oil over medium high heat.
  • Step #6 Add the garlic & sauté, stirring, until barely golden; do not let it brown.
  • Step #7 Immediately remove the pan from the heat & stir in the the flour until smooth.
  • Step #8 Return to the heat & cook, stirring, 1 to 2 mins.
  • Step #9 Gradually stir in the the broth.
  • Step #10 Add the chili pepper, & salt & cook, 1 Tablespoon of the parsley, stirring, the lemon juice, until the sauce is thick & smooth.
  • Step #11 Remove from the heat & set aside.
  • Step #12 In a medium sized, heavy skillet heat the remaining 1 Tablespoon oil over high heat.
  • Step #13 Add the mushrooms & sauté, stirring frequently, until they are lightly browned.
  • Step #14 Add the mushrooms to the sauce & let simmer 5 mins.
  • Step #15 Taste & adjust the seasoning.
  • Step #16 Transfer to a heated serving bowl.
  • Step #17 Sprinkle top with the remaining 1 Tablespoon parsley & serve at once as a tapa.
