Chicken-asparagus Marsala Recipe

Ingredients
  • 1 tbsp sliced parsley .
  • 1 (10 oz) package frozen asparagus spears, partially thawed .
  • 1/8 tsp pepper .
  • parmesan cheese (to garnish) .
  • 4 chicken cutlets .
  • 1 c marsala wine .
  • 1/2 lb mushrooms, sliced .
  • 1 tbsp vegetable oil .
  • 1/2 tsp salt .
  • garlic .
  • 2 tbsps butter .
  • 1 medium onion, sliced

Directions
  • Step #1 In a skillet, place butter & oil & heat on medium.
  • Step #2 Add chicken & cook 5 mins, turning Remove & set aside.
  • Step #3 To drippings in same skillet, add asparagus, mushrooms & onions.
  • Step #4 Cook stirring constantly about 4 mins.
  • Step #5 Return the chicken to the pan.
  • Step #6 Add wine, salt, pepper, parsley, & garlic.
  • Step #7 Bring to a boil & cook for 2 mins Reduce heat, cover & let simmer about 3 mins or until chicken & vegetables are tender.
  • Step #8 Arrange chicken on a platter.
  • Step #9 Spoon vegetable sauce over sauce & sprinkle with parmesan cheese to your liking.
