Ingredients
1 tbsp sliced parsley .
1 (10 oz) package frozen asparagus spears, partially thawed .
1/8 tsp pepper .
parmesan cheese (to garnish) .
4 chicken cutlets .
1 c marsala wine .
1/2 lb mushrooms, sliced .
1 tbsp vegetable oil .
1/2 tsp salt .
garlic .
2 tbsps butter .
1 medium onion, sliced
Directions
Step #1 In a skillet, place butter & oil & heat on medium.
Step #2 Add chicken & cook 5 mins, turning Remove & set aside.
Step #3 To drippings in same skillet, add asparagus, mushrooms & onions.
Step #4 Cook stirring constantly about 4 mins.
Step #5 Return the chicken to the pan.
Step #6 Add wine, salt, pepper, parsley, & garlic.
Step #7 Bring to a boil & cook for 2 mins Reduce heat, cover & let simmer about 3 mins or until chicken & vegetables are tender.
Step #8 Arrange chicken on a platter.
Step #9 Spoon vegetable sauce over sauce & sprinkle with parmesan cheese to your liking.
