Grilled Scallops With Honey-dew Avo
Ingredients
1/4 tsp ginger .
3 tbsps lime juice .
1 lb sea scallops .
1 tbsp honey .
1 tbsp soy sauce .
1 tbsp vegetable oil .
2 tbsps toasted sesame seeds (or more)
Directions
Step #1 Combine lime juice, honey, oil, soy sauce & ginger.
Step #2 Add scallops & toss to coat.
Step #3 Cover up & put in the fridge 1 hr, stirring every once in awhile.
Step #4 Remove scallops from marinade, reserving marinade, & thread evenly on 4 skewers.
Step #5 Place skewers on shallow baking pan that has been sprayed with non-stick coating (or line with non-stick foil wrap for easy cleanup).
Step #6 Broil 4-6 inches from source of heat 2-3 mins.
Step #7 Turn & baste with reserved marinade & continue cooking 2-3 mins, or until opaque throughout.
Step #8 Place sesame seeds on waxed paper & roll each skewer over the seeds to evenly coat scallops.
