Chicken Spinach Bake Recipe

Ingredients
  • 3/4 c Italian seasoned bread crumbs
  • 16 skinless, boneless chicken breast halves
  • 2 c milk
  • 1/2 tsp onion salt
  • 5 tbsps butter or margarine, melted
  • 6 tbsps butter or margarine, divided
  • 3 (10 oz) packages frozen sliced spinach, thawed
  • CHEESE SAUCE:
  • 3 eggs
  • 1 c sliced fresh mushrooms
  • 3/4 c grated Parmesan cheese, divided
  • 2 c shredded Cheddar cheese
  • salt & pepper to taste
  • 1/4 c all-purpose flour
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Directions
  • Step #1 Drain & squeeze out excess moisture from spinach.
  • Step #2 Beat eggs, onion salt & nutmeg.
  • Step #3 Add spinach & 1/4 c Parmesan cheese; mix well.
  • Step #4 Combine bread crumbs & remaining Parmesan.
  • Step #5 Sprinkle top chicken with salt & pepper; coat with crumb mixture.
  • Step #6 Place in two greased 13-in.
  • Step #7 x 9-in.
  • Step #8 x 2-in.
  • Step #9 baking pans.
  • Step #10 Spread 2 tbsps spinach mixture onto each breast.
  • Step #11 Sprinkle top with remaining crumb mixture; drizzle with butter.
  • Step #12 Bake at 350 degrees F for 35-40 mins or until chicken juices run clear.
  • Step #13 For sauce, melt 4 tbsps butter; mix in flour & salt.
  • Step #14 Stir to form a smooth paste.
  • Step #15 Add milk; cook & stir until thickened & bubbly.
  • Step #16 Add cheese & stir until melted.
  • Step #17 Saute mushrooms in remaining butter.
  • Step #18 Stir into cheese mixture.
  • Step #19 Carefully pour the sauce over chicken, or pour this into a serving bowl & pass.
