Hawaiian Carrot Cake Recipe

Ingredients
  • 3/4 c plain yogurt or h. mayonnaise .
  • 2 1/2 c grated carrots .
  • 1 1/2 c brown sugar .
  • 3/4 c walnuts, sliced .
  • 3 eggs .
  • 1/2 tsp nutmeg .
  • 1 (8 oz) can crushed pineapple .
  • 2 tsps cinnamon .
  • 2 tsps baking soda .
  • 2 c all-purpose white flour .
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Grease a 9 inch tube mold or bundt cake mold.
  • Step #3 In a medium mixing bowl, mix together the first 5 ingredients.
  • Step #4 In a large mixing bowl, mix together the eggs & sugar, yogurt(or mayonnaise) & the drained crushed pineapple.
  • Step #5 Incorporate slowly the dry ingredients, mixing well.
  • Step #6 Add the carrots & nuts, mix well.
  • Step #7 Pour the cake batter into cake mold & bake in 350°F oven for 50-60 mins.
  • Step #8 Let cool, & unmold onto cake rack.
  • Step #9 Ice the cake with cream cheese icing, garnish with toasted coconut.
