Ingredients
1/4 c beet juice, from beets (or water) .
2 tbsps vinegar .
water, 3/4-inch deep in pan .
2 tsps cornstarch .
2 c raw beets, sliced .
Sauce .
2 tbsps butter .
1/4 c sugar
Directions
Step #1 Pare & dice raw beets.
Step #2 Cook in covered pan until tender.
Step #3 Mix cornstarch & sugar.
Step #4 Add liquid slowly, stirring into a smooth paste.
Step #5 Cook over low heat/flame until slightly thickened.
Step #6 Add vinegar & butter.
Step #7 Stir to mix & pour over beets.
