Harvard Beets Recipe

Ingredients
  • 1/4 c beet juice, from beets (or water) .
  • 2 tbsps vinegar .
  • water, 3/4-inch deep in pan .
  • 2 tsps cornstarch .
  • 2 c raw beets, sliced .
  • Sauce .
  • 2 tbsps butter .
  • 1/4 c sugar

Directions
  • Step #1 Pare & dice raw beets.
  • Step #2 Cook in covered pan until tender.
  • Step #3 Mix cornstarch & sugar.
  • Step #4 Add liquid slowly, stirring into a smooth paste.
  • Step #5 Cook over low heat/flame until slightly thickened.
  • Step #6 Add vinegar & butter.
  • Step #7 Stir to mix & pour over beets.
