Ingredients
salt .
pepper .
2 sprigs rosemary .
superfine sugar .
olive oil .
2 garlic cloves .
6 tomatoes .
100 g goat cheese (3.5 oz) .
4 sprigs thyme
Directions
Step #1 Preheat oven to 100°C / 220°F.
Step #2 With a knife cut crosses into the skin of the tomatoes.
Step #3 Put them into boiling water until it is easy to remove their skin (should take a min or two).
Step #4 Dash them in cold water & remove skin.
Step #5 Quarter & remove seeds.
Step #6 Distribute on a baking sheet.
Step #7 Dribble tomatoes generously with olive oil.
Step #8 Set a little bit of the herbs aside (for garnish).
Step #9 Remove the leaves/needles (I sliced the needles roughly) from the rest of the herbs & sprinkle it over tomatoes.
Step #10 Sprinkle top everything generously with superfine sugar.
Step #11 Spice up with salt & pepper.
Step #12 Put the tomatoes into the oven (middle shelf) for 1 hr.
Step #13 Cut garlic in fine slices.
Step #14 Cut cheese in fine slices - the cheese slices should not be bigger than the tomato pieces in the oven.
Step #15 When the tomatoes were in the oven for 1 hr, distribute slices of garlic & cheese on top of the tomato pieces.
Step #16 Put them back into the oven again & give them another 5 mins.
Step #17 Remove from oven, drizzle with some olive oil (optional, I didn't & they were still delicious) & garnish with the herbs you set aside.
Step #18 Serve them either on individual plates (you then need a fork) with crusty bread or as a crostini topping on some toasted french stick slices.
